Sourdough- it's what's for breakfast.
Or snacks. Or dinner. Or dessert... Ok, so really all the time! But this time we're making waffles, and that's usually breakfast, right?

This recipe is a combination of a few and I've been playing with it for a while. I really wanted to be able to do pancakes or waffles, with the same recipe, from discard I had even if I forgot to do a sponge the night before. There are some great recipes if you remember in time to do that sponge, but that's usually not my case. So try it out and let me know what you think!! Try this both as pancakes and as waffles or mix and match (because I know I'm not the only one with a divided household on the issue of best breakfast bread!)
Sourdough Waffles or Pancakes: 2 cups bubbly happy starter (or not so bubbly. Still seems to work just fine)
2 large eggs
1/4 cup melted coconut oil or butter
1/2 teaspoon salt
1 teaspoon baking soda
* Optional (but recommended) splash of vanilla, sprinkle of cinnamon
Pour sourdough "discard" into mixing bowl. Crack eggs into sourdough, add salt, vanilla and cinnamon.
In separate bowl, melt butter or coconut oil, mix baking soda into this and then stir into starter and mix well. Pour into preheated waffle iron or cook as pancakes as usual. Serve with good butter, fruit, real maple syrup, jam or whatever other toppings you enjoy!
